Lentil Barley Spinach Salad Recipe

A seriously delicious salad for all you lentil lovers out there!

This recipe serves 6

½ cup green lentils
½ cup pearl or pot barley
2 cloves garlic, minced
4 cups water
4 cups baby spinach
½ small onion, finely chopped
1 tart apple, cored and diced
½ cup feta, crumbled
⅓ cup almonds, chopped and toasted

Dressing:
⅓ cup olive oil
2 tbsp lemon juice
2 tbsp white wine vinegar
1 tbsp grainy mustard
2 tsp honey
salt and pepper to taste

In a medium saucepan, combine lentils, barley, garlic and water. Boil for 20 minutes over medium-high heat or until tender. Drain well and allow to cool. Transfer mixture to a large mixing bowl and add spinach, onion, apple, and feta. In a small bowl, whisk all dressing ingredients together and toss into salad. Top with toasted almonds just before serving.
