Turkey Chia Meatball Recipe

So easy to make and so delicious! Turkey Chia Meatballs are our new favorite!

This recipe serves 4 (makes 12 meatballs)

2 tbsp chia seeds
1 lb ground turkey
½ small onion, diced
2 cloves garlic, minced
2 tbsp fresh basil, chopped
2 tbsp sun-dried tomatoes (packed in oil), drained and chopped
1 tsp salt (or to taste)
½ tsp pepper

Preheat oven to 475F and line a baking sheet with parchment paper. Place chia seeds in small bowl and stir in ¼ cup warm water. Let sit for 10 minutes until thick gel forms. In a large bowl, use hands to mix all ingredients together including the thickened chia gel. Form golf-ball sized meatballs and place on lined baking sheet. Bake in center rack for 12-15 minutes or until meatballs are well done. Serve over vegetables, pasta, or zucchini noodles.
