Chocolate Chia Pudding Recipe

OMG delicious!

This recipe serves 6

1 398ml can coconut milk
1/4 cup chia seeds, whole
1/4 cup raw cacao powder
1 tsp pure vanilla extract
2-3 tbsp pure maple syrup
Cacao nibs or toasted coconut flakes (optional)

In a medium bowl, stir together coconut milk, chia seeds, cacao powder, vanilla, and maple syrup until well combined. Give your pudding a quick taste to see if it’s sweet enough. Cover and refrigerate for at least an hour. If pudding is too thin, simply add another tbsp chia seeds and refrigerate again. When serving, top with cacao nibs or coconut flakes. This pudding will stay good for 4-5 days in the fridge – if it lasts that long!
