Apple Feta Couscous Recipe

This recipe serves 6

1 cup couscous, cooked
2 tart apples, cubed
½ cucumber, cubed
⅓ cup feta cheese, chopped
¼ cup red onion, finely chopped
1 lemon, zested and juiced
½ cup feta, crumbled
2 tbsp fresh mint, chopped
2 tbsp fresh parsley, chopped
1 tsp dried oregano (or 1 tbsp fresh)
¼ cup pine nuts, toasted
salt and pepper to taste

In a large bowl, toss all ingredients except pine nuts until thoroughly mixed. Top with toasted pine nuts before serving.
